Yes to Tofu!

We ventured out and had a 'Yes-We'll-Try-Tofu' night with Cara! She had told me how she was going to try and cook with it this week, and we thought we'd follow in her footsteps. After heading to Hy-Vee & Trader Joe's, we had everything we needed. 

Homemade BBQ Tofu Flatbread
Recipe from Recipage
16 oz Extra Firm Tofu
3/4 Cup BBQ Sauce
1/4 Cup Water
2 Tbsp Olive Oil
1/2 Red Onion 
1 Medium Tomato
5 Kales Leaves
1/4 Cup Extra Sharp Cheddar Cheese
1/4 Cup Grated Sharp Cheddar Cheese
Your Choice of Pizza Dough

Directions:
-Press tofu.
-Prepare pizza dough.
-Heat a large-skillet to medium-high heat. Add olive oil.
-Slice tofu into small pieces. (Similar to french fry shape. 1/4"wide 2" long)
-Add tofu to skillet. Toss occasionally until the tofu is brown & crispy on all sides. 
This takes about 15 minutes.
-While tofu is cooking, chop onion, slice tomato, and rinse kale. 
Tear up kale into small pieces and remove stems.
-Add chopped onion to tofu skillet after tofu has cooked the 15 minutes.
-Whisk together 1/4 cup of water with 1/4 cup of BBQ sauce and pour over skillet mixture. Reduce heat to low-medium & allow to simmer while preparing flatbread.
-Put aluminum foil over a regular sized cookie sheet & spray some Pam on the foil. Roll dough to cover most of the cookie sheet. 
-Spread remaining 1/2 cup of BBQ sauce on dough.
-Add toppings: 1)Tofu/Onion Mixture. 2)3/4 of Cheese. 3)Kale & Tomato 4)Remainder of Cheese.
-Bake for 17 minutes on 350F.

A blog post wouldn't be complete without Emma pictures. We are so blessed to be able to use our church nursery during the weekday mornings to let our kids burn off some energy. Emma is a big fan of all the toys but hasn't quite got used to non-carpeted floors. In time :)



Last, this is the week we've been waiting for...... We FINALLY get to find out if the Udey household will gain another lady or gentleman in a few months! We found out, I think, around 18 weeks with Emma; so this waiting until 21 weeks has been tough!
