Since When Do We Have A 15 Month Old!?!?!

We went in for Emma's 15 month check up today.
Here's some stats on our growing girl!
Height: 31", 70%
Weight: 22 lbs 5 oz, 67%
Head: 47cm, 84%

The doctor loves everything he sees. He loves that she is walking/running so well. We're working more and more on words as she only knows a handful, but he isn't worried because she is doing great with everything. 


I asked her to pose; this is what she did.

What A Man!

I can't believe it's been 2 years since the morning of our wedding day. Time does go by so quickly, but it makes me more and more thankful for each day I have. Even as I got up this morning to make Jay a cup of coffee, I had a quick 'pity party' moment. "I wish he didn't have to go to work and we could just spend the day together....." You know, those thoughts. But, as soon as I sent him off, I realized, I get to stay home because this amazing man walks out that door every morning so I can. He doesn't complain about it; he just does it. 
Life sure has changed in 2 years though. 
I couldn't ask for a better 2 years of life together with him.

Is There A Designer Out There?

I'm planning on redoing another dresser in about a week, and I'd love to have some help in which direction to take. I recently redid Emma's dresser. Blog Post To View Emma's Dresser   Our dresser is a standard 4 drawer dresser. We are painting our bedroom gray and I'd like to go with more of an Asiany feel minus the bright red but I'll add some burgundy with curtains. Here's the dilemma: Should I paint the dresser 1) All black and paint the handles a metallic silver (to match our headboard) or 2) Black with gray drawers and black handles?  Option 2 would look a lot like Emma's.  

I put up a new poll. Or if you have any ideas feel free to leave a comment! I'll be buying paint later this week!

We've Been Busy!

I feel like we've been so busy but yet not. Strange how that works. 
Here's what we've been up to!
After we found out we were having a girl, I wanted to make some cupcakes to make our announcement for Jay's co-workers, and Emma wanted to help!




This was right before there was batter everywhere! She's a great helper!

With the awesome weather, there have been some garage sales we've been able to go to! 
I found Emma a rocking chair and an outside chair. She seems to love them!




We've also helped Emma learn where her belly button is! 



 We put together the alphabet foam letters in Emma's room. Jay brought her out and apparently she thought the letter 'Z' was a pretty necklace. :)

Emma LOVES being outside. Her favorite things right now are seeing airplanes and waving, seeing dogs and waving, and seeing birds and waving. She also tends to 'talk' to them. It's super cute!







The last week it's been a bit chilly outside, so we've cleaned and started a few around the house projects. I decided to take our boring pillows that I made in the formal living room and give them a little spice.

Yes to Tofu!

We ventured out and had a 'Yes-We'll-Try-Tofu' night with Cara! She had told me how she was going to try and cook with it this week, and we thought we'd follow in her footsteps. After heading to Hy-Vee & Trader Joe's, we had everything we needed. 

Homemade BBQ Tofu Flatbread
Recipe from Recipage
16 oz Extra Firm Tofu
3/4 Cup BBQ Sauce
1/4 Cup Water
2 Tbsp Olive Oil
1/2 Red Onion 
1 Medium Tomato
5 Kales Leaves
1/4 Cup Extra Sharp Cheddar Cheese
1/4 Cup Grated Sharp Cheddar Cheese
Your Choice of Pizza Dough

Directions:
-Press tofu.
-Prepare pizza dough.
-Heat a large-skillet to medium-high heat. Add olive oil.
-Slice tofu into small pieces. (Similar to french fry shape. 1/4"wide 2" long)
-Add tofu to skillet. Toss occasionally until the tofu is brown & crispy on all sides. 
This takes about 15 minutes.
-While tofu is cooking, chop onion, slice tomato, and rinse kale. 
Tear up kale into small pieces and remove stems.
-Add chopped onion to tofu skillet after tofu has cooked the 15 minutes.
-Whisk together 1/4 cup of water with 1/4 cup of BBQ sauce and pour over skillet mixture. Reduce heat to low-medium & allow to simmer while preparing flatbread.
-Put aluminum foil over a regular sized cookie sheet & spray some Pam on the foil. Roll dough to cover most of the cookie sheet. 
-Spread remaining 1/2 cup of BBQ sauce on dough.
-Add toppings: 1)Tofu/Onion Mixture. 2)3/4 of Cheese. 3)Kale & Tomato 4)Remainder of Cheese.
-Bake for 17 minutes on 350F.

A blog post wouldn't be complete without Emma pictures. We are so blessed to be able to use our church nursery during the weekday mornings to let our kids burn off some energy. Emma is a big fan of all the toys but hasn't quite got used to non-carpeted floors. In time :)



Last, this is the week we've been waiting for...... We FINALLY get to find out if the Udey household will gain another lady or gentleman in a few months! We found out, I think, around 18 weeks with Emma; so this waiting until 21 weeks has been tough!

We're 1/2 Way!!!

I realized I have been terrible at putting up pictures of this pregnancy. So, here we are at 20 weeks and finally a picture! 10 days left until we find out what we are having!



In other news, the Udey's came this weekend! We had such a great time with them!
